Alc/vol: N/A To produce alcohol greater than 16% alc/vol (32 proof) one must distill. Distilling is the process used to extract alcohol from a liquid by reducing the amount of water in the liquid. This is done by heating wine (or another fermented alcoholic product) in a still to between 185°F (alcohol's evaporation point) and 212°F (water's evaporation point). The alcohol evaporates (turns into a gas), while most of the water is left in the still. As the alcohol vapors rise, they are collected in the funnel shaped lid. The lid has a copper pipe connected to it which turns and spirals downward. It is in the spiral that alcohol vapors cool and change back to liquid form. The newly formed liquid has been separated from most of the water, so it is now more concentrated in alcohol (percentage of alcohol per volume of liquid; alc/vol).
